Hello! I am Lorena, owner of Tenute Fasoli, a small family winery located in
Sant'Ambrogio di Valpolicella, in the heart of the Valpolicella Classica.
I started my adventure in 2015, from zero, taking over the old vineyard,
which has been in the family on the maternal side for over two hundred years,
converting it to organic farming and enhancing the native vines typical of
the area: Corvina, Corvinone, Rondinella and Molinara.
The plants are grown using the Veronese pergola system and are very old
(the youngest are at least fifty years old). The grapes are harvested
manually.
Then I have another plot, one of a kind, on Monte Baldo at 980 m a.s.l.
obtained starting from a pasture. Here I planted, almost entirely by hand,
three hectares of Müller Thurgau and Incrocio Manzoni, to obtain a surprising
white wine, a true rare pearl! Then for another three hectares there are new
things to come...
Here too, the grapes are harvested exclusively by hand and special
attention is given to the processes, given the steep slope and the terraced
vineyard.
I opened my cellar in Sant'Ambrogio in 2018 and slowly I began to equip it
until today with a cellar complete with everything needed in order to be
autonomous:
- the old restored concrete tanks where fermentation and vinification takes
place;
- the barrique cellar area with the barriques for refining the wines;
- equipment for winemaking, bottling and labelling.
The company has been completely organic since 2019 and is part of Fivi.
