The Fausta Mansio farm is located in one of the most beautiful valleys in the Syracuse area, Val d’Anapo, known in ancient times for the presence of papyrus and an area particularly suited to quality viticulture. 90 thanks to Fausto Consiglio’s passion for wine, and food and wine in general, with the aim of recovering one of the oldest Syracusan productions and traditions, the Moscato di Siracusa. The property extends for 13 hectares, of which 7 are planted with vineyards in 1999 and 3 with olive groves in 1995, all rigorously cultivated under organic conditions, to preserve the naturalness and integrity of our territory as much as possible. The location of its vineyards on gently hilly land, about 50 m above sea level, allows the sea breezes to reach the bunches and give them those particular characteristics that distinguish Moscato di Siracusa from the others. The soil on which the vineyard stands is purely clayey in nature and this has allowed a perfect adaptation of the plant, thus managing to obtain fine grapes. Add to this an extremely favorable climatic condition, with average summer temperatures around 30°C which allow for a harvest of well-ripened grapes towards the end of August.
